Cooking Chronicles: Spicy Turkey Cheddar Melts

My spicy turkey cheddar melts are one of my favorite quick, easy and guilt-free sandwiches.  While in a rush to throw together a quick and easy dinner one night, I skimmed through my fridge and pantry, pulled out a few simple and fresh ingredients and ended up with this yummy sandwich.  These melts are an awesome lunch or dinner option.

I purchase most of my bread, fruits, veggies, cheeses and sliced deli meat from my local farmers’ market.  The fruits and vegetables you buy at your local farmers’ markets are the freshest and tastiest available. The fruits and veggies are allowed to ripen in their fields and are brought directly to you — no long-distance shipping, no gassing to simulate the ripening process, no sitting for weeks in storage. The farmers’ market food is as real as it gets — food fresh from the farm. The breads and cheese are all homemade and extremely tasty.

Ingredients

  • 1 lb. of boneless, skinless turkey breast, sliced
  • whole wheat bread loaf, sliced
  • habanero Cheddar cheese, thinly sliced
  • 8-9 baby portabella mushrooms, sliced
  • 1 medium-sized vidalla onion, thinly sliced
  • 1 avocado, pitted and thinly sliced
  • 2 tbsp. olive oil
  • salt & pepper to taste

Directions

Saute sliced mushrooms and onions over medium/high heat, with 2 tbsp. of olive oil, for for 3-5 minutes.  Sprinkle mushrooms and onions with desired amount of salt and pepper for added flavor.  Set sauteed mushrooms and onions aside.  Layer the sliced wheat bread with sauteed onions and mushrooms, 2 slices of avocado, a generous amount of sliced turkey breast and 1-2 slices of habanero cheddar cheese.  Place another slice of wheat bread on top of the layered ingredients and give it a firm press, forming a sandwich.  Coat a clean skillet or griddle (I use a griddle, but a panini maker can definitely be used in place of a griddle or skillet.) with non-stick cooking spray.  Place sandwiches on griddle over medium heat.  Cook sandwich on both sides, 5-6 minutes per side.  Each side of the bread should be golden brown.  Ensure that all ingredients are thoroughly heated and cheese is melted.  Remove from griddle, slice and enjoy!

*This recipe makes about 4 sandwiches.
